Pierre Gimonnet has long been considered a benchmark for quality in Chardonnay-based wines in Champagne. Their chalky soils in the Côte des Blancs create wines of incredible focus and expressive minerality. Gimonnet’s wines have been poured by the glass at some of the finest 3-star Michelin restaurants in both Europe and America; we’re proud to now offer a wine that represents the quality standards of this revered house for prices that no longer confine it to a white table cloth. The “Selection Belles Années,” is essentially a non-vintage version of Gimonnet’s “Cuvée Gastronome,”. Like the normal Gastronome, it has a petite mousse, so only 4.5 atmospheres of pressure instead of 5-6. The wine is just slightly less carbonated than a standard Champagne, which makes it more accessible after opening and a better partner for food (hence the name Gastronome).

Since 1750, the history of the Gimonnet family is indissociable of the one of the Champagne vineyard.  From the beginning, the Gimonnet family are winegrowers that go about their harvest by the rules of Champagne trade.  Anecdotes, legends and experiences enrich themselves with the passing of the centuries and transmit themselves generation to generation. The know-how and the love of the vine also play an important part in this process. It was during the period between the two great wars that the wine-making activity of the house really began. Around 1935, Pierre drew up the first tariffs. The fresh grape juice cohabitated with the "quiet native wine of Champagne" and a "Champagne Cru" … Practically at the same price. From 1955, Michel Gimonnet, the son Pierre, invested himself with passion and audacity in the development of a range of Champagne "Houses".  He knows each vine of every acre that he trampled on during his youth.  It is he who knows how unique the family vineyard is.  The style of its wines goes some way to express the whole beauty, vivacity, and its race. ichel generated a concern of an almost obsessional perfection; a requirement of such extremes transmitted to its sons, Olive Tree and Didier. Such intransigence implies a severe technical precision, but following the example of the true goldsmiths of wine, the Gimonnet family still work with respect to the hand-crafted work. For the harvest all the grapes are gathered manually.  The grapes are pressed in a traditional manner, automatically divided, into two pneumatic managed presses, since 1996. Conscious of the variety and big wealth of their vineyard, Olivier and Didier Gimonnet put all their work into extracting the most beautiful expressions of the grapes and its “Terroir” (soil).  The vinifications are carried out in small capacity tanks (of 25 to 125 hl), thus preserving the characteristics of the vineyard parcels, linked to the age of the vines, or again to their "climate".
