The 2006 Les Pavots (a 2,730-case blend of 77% Cabernet Sauvignon, 13% Cabernet Franc, and the rest Merlot and Petit Verdot) exhibits big notes of chocolate fudge intermixed with dark berry fruit, forest floor, underbrush, and some smoky oak. The wine is full-bodied, with remarkable intensity, low acidity, and a fleshy, opulent mouthfeel. This wine should drink well for 15ndash;20+ years.
Glass-staining ruby. Powerful aromas of red- and blackcurrant, with deeper cherry compote, tobacco and candied licorice emerging with air. Very rich but surprisingly graceful, offering sweet red and dark berry flavors, velvety texture and a suave floral pastille quality. Tightens up on the finish, which repeats the redcurrant and licorice notes and simply refuses to let up. This winersquo;s depth and linear character are something else. There is more cabernet sauvignon in this Pavots than in any previous bottling, according to Nickrsquo;s brother Luc, who still consults here.

The best Cabernet-based wine in California right now might not be from Napa Valley, but from Sonoma. The 23-acre hillside Les Pavots vineyard, in Knights Valley, grows Cabernet Sauvignon, Cabernet Franc, Merlot and Petit Verdot, all blended in this wine. Helen Turley, Mark Aubert and Luc Morlet have all been involved in the winemaking here, and now Lucrsquo;s brother Nicolas is at the helm, building upon the blueprint of this vineyardrsquo;s strength for making well-structured wines with pure fruit flavors.
Founded in 1982 and having established a reputation for Chardonnay early on, Peter Michael Winery today has become one of Californiarsquo;s finest Cabernet producers. Les Pavots (ldquo;the poppiesrdquo;) is a Bordeaux-style red (68 percent Cabernet Sauvignon, 17 percent Merlot and 15 percent Cabernet Franc) from a 23-acre vineyard located high above Knights Valley in eastern Sonoma County.
Peter Michaelrsquo;s Bordeaux program is built around their flagship Cabernet Sauvignon-based wine, Les Pavots. The 2008 Les Pavots, a blend of 67% Cabernet Sauvignon, 22% Cabernet Franc and 11% Merlot, offers up notes of roasted coffee, cocoa, chocolate fudge, black currants, licorice and a hint of truffles. This full-bodied, beautifully rich red boasts an opulent texture, impressive purity and a long finish. Impressively made with impeccable attention to detail (it is sorted berry by berry rather than grape bunch by grape bunch), this 3,500-case cuvee should drink well for two decades or more. Quality-wise, the 2008 is just a notch behind the stratospheric 2007.
A well-ripened, opulent wine; itrsquo;s huge in blackcurrant and cassis flavors and elaborate oak. You can taste the barrels in the smoke, vanilla and spicy flavors. Acidity hanrsquo;t been integrated yet, nor have the dusty tannins. Itrsquo;s really good now, but is best left to soften and integrate through 2008.
Les Pavots is Peter Michael’s flagship blend of red Bordeaux varietals from our Knights Valley Estate. While the blend varies from vintage to vintage, typically it is two thirds Cabernet Sauvignon with roughly equal parts Cabernet Franc and Merlot and a touch of Petit Verdot. Les Pavots captures an elegant refined expression of the terroir embracing the full spectrum of Cabernet family varietal expression with its trademark touch of herbes de provence. The name translates to “The Poppies” and is named after the California poppies that grow wild on our estates and are the inspiration for the winery’s logo.

The complexity and intense character continue into the finish with a massive mouthfeel, lasting impressions on the palate and round, silky tannins. 2008 Les Pavots will benefit from three years of cellaring for near term enjoyment and will age gracefully for two decades or more.
