The best Cabernet-based wine in California right now might not be from Napa Valley, but from Sonoma. The 23-acre hillside Les Pavots vineyard, in Knights Valley, grows Cabernet Sauvignon, Cabernet Franc, Merlot and Petit Verdot, all blended in this wine. Helen Turley, Mark Aubert and Luc Morlet have all been involved in the winemaking here, and now Lucrsquo;s brother Nicolas is at the helm, building upon the blueprint of this vineyardrsquo;s strength for making well-structured wines with pure fruit flavors.
The 2006 Les Pavots (a 2,730-case blend of 77% Cabernet Sauvignon, 13% Cabernet Franc, and the rest Merlot and Petit Verdot) exhibits big notes of chocolate fudge intermixed with dark berry fruit, forest floor, underbrush, and some smoky oak. The wine is full-bodied, with remarkable intensity, low acidity, and a fleshy, opulent mouthfeel. This wine should drink well for 15ndash;20+ years.
Shows gorgeous Cabernet purity, with a profound offering of ripe, fleshy currant, black cherry, blackberry, anise and mineral. Amazingly supple and harmonious, with tannins that are both gentle and tender and then just firm enough to let you know theyrsquo;re there. Made from a blend of Cabernet Sauvignon, Cabernet Franc, and Malbec, it displays an impressive, opaque ruby/purple color, followed by a superb nose of jammy black fruits, minerals, herbs and spices. The wine is full-bodied and rich, with exceptional length and balance, as well as gorgeously extracted flavors. It seems sweeter, more expansive,and deeper than when tasted last year. One of the top efforts of the vintage, it is another compelling Cabernet Sauvignon from this winery. Although accessible, Les Pavots possesses enough tannin and extract to merit 4ndash;5 years of cellaring; it will last for 20ndash;25 years. Once again, Les Pavots combines the best of the rich, ripe California fruit with a Bordeaux-like elegance and complexity.
Supple-textured and harmonious, with layers of ripe plum, currant, black licorice, cedar and cigar box that are evenly distributed. Rich and full-bodied without being heavy, this retains its focus and elegance, ending with a long, graceful finish and an espresso bean note. Peter Michaelrsquo;s Bordeaux program is built around their flagship Cabernet Sauvignon-based wine, Les Pavots. The 2008 Les Pavots, a blend of 67% Cabernet Sauvignon, 22% Cabernet Franc and 11% Merlot, offers up notes of roasted coffee, cocoa, chocolate fudge, black currants, licorice and a hint of truffles. This full-bodied, beautifully rich red boasts an opulent texture, impressive purity and a long finish. Impressively made with impeccable attention to detail (it is sorted berry by berry rather than grape bunch by grape bunch), this 3,500-case cuvee should drink well for two decades or more. Quality-wise, the 2008 is just a notch behind the stratospheric 2007.
Founded in 1982 and having established a reputation for Chardonnay early on, Peter Michael Winery today has become one of Californiarsquo;s finest Cabernet producers. Les Pavots (ldquo;the poppiesrdquo;) is a Bordeaux-style red (68 percent Cabernet Sauvignon, 17 percent Merlot and 15 percent Cabernet Franc) from a 23-acre vineyard located high above Knights Valley in eastern Sonoma County.
Les Pavots is Peter Michael’s flagship blend of red Bordeaux varietals from our Knights Valley Estate. While the blend varies from vintage to vintage, typically it is two thirds Cabernet Sauvignon with roughly equal parts Cabernet Franc and Merlot and a touch of Petit Verdot. Les Pavots captures an elegant refined expression of the terroir embracing the full spectrum of Cabernet family varietal expression with its trademark touch of herbes de provence. The name translates to “The Poppies” and is named after the California poppies that grow wild on our estates and are the inspiration for the winery’s logo.

The complexity and intense character continue into the finish with a massive mouthfeel, lasting impressions on the palate and round, silky tannins. 2008 Les Pavots will benefit from three years of cellaring for near term enjoyment and will age gracefully for two decades or more.
