Acidity han't been integrated yet, nor have the dusty tannins. It's really good now, but is best left to soften and integrate through 2008.

This magnificent young wine gushes with ripe, fleshy Cabernet flavors, and while the flavors run deep, it's the balance and suppleness of the tannins that let you savor the wealth of perfectly ripened grapes. Cabernet Sauvignon, Merlot, Cabernet Franc and Petit Verdot. Best from 2006 through 2012.
A monumental effort is the 2002 Les Pavots, a blend of 71% Cabernet Sauvignon, 12% Merlot, 10% Cabernet Franc, and 7% Petit Verdot. And there is even more good news - there are 2,800 cases of this exceptional wine. Dense purple-colored with an extraordinary nose of melted licorice, white chocolate, creme de cassis, licorice, and incense, the wine hits the palate with a silky opulence, and marvelous, full-bodied power, but it is light on its feet, with great delineation, vibrancy, and freshness. Superb purity and a finish that goes on for 50+ seconds is the stuff of modern-day California legends. This beauty is already beginning to age well yet should last easily for 18-22 years. A rich, earthy, decadent style, with a loamy core of tannins underneath an equally earthy core of currant, tobacco, leather and spice. Dry, potent tannins coat the palate on the finish, with plenty of concentrated flavors. Cabernet Sauvignon, Cabernet Franc and Merlot. Best from 2004 through 2012.
Full saturated ruby. Cassis, flowers, spicy oak and a hint of sassafras on the nose; a bit less obviously ripe than the '99. Then sweet and supple on entry, with some youthful astringency on the back currently shortening the wine's fruit. Seems to possess less mid-palate density for its youthfully tough tannins.
The dense purple-colored 1999 Les Pavots exhibits sweet aromas of cassis, tapenade, cherries, licorice, and subtle wood. Medium-bodied, with a cool climate textural profile, noticeable tannin, and a Bordeaux-like finish, it will be drinkable between 2004-2015.
Founded in 1982 and having established a reputation for Chardonnay early on, Peter Michael Winery today has become one of California's finest Cabernet producers. Les Pavots ("the poppies") is a Bordeaux-style red (68 percent Cabernet Sauvignon, 17 percent Merlot and 15 percent Cabernet Franc) from a 23-acre vineyard located high above Knights Valley in eastern Sonoma County.
Les Pavots is Peter Michael’s flagship blend of red Bordeaux varietals from our Knights Valley Estate. While the blend varies from vintage to vintage, typically it is two thirds Cabernet Sauvignon with roughly equal parts Cabernet Franc and Merlot and a touch of Petit Verdot. Les Pavots captures an elegant refined expression of the terroir embracing the full spectrum of Cabernet family varietal expression with its trademark touch of herbes de provence. The name translates to “The Poppies” and is named after the California poppies that grow wild on our estates and are the inspiration for the winery’s logo.

The complexity and intense character continue into the finish with a massive mouthfeel, lasting impressions on the palate and round, silky tannins. 2008 Les Pavots will benefit from three years of cellaring for near term enjoyment and will age gracefully for two decades or more.
