The distinctive aromas and flavors of our proprietary blend of Cabernet Sauvignon, Cabernet Franc and Merlot exhibits its hillside origin on the slopes of Mt. St. Helena in Knights Valley. Rocky, volcanic rhyolitic soils contribute a mineral richness and add to the wine’s complexity. Spanning 23 acres, Les Pavots ascends to an elevation of nearly 1,400 feet. Founded in 1982 and having established a reputation for Chardonnay early on, Peter Michael Winery today has become one of Californiarsquo;s finest Cabernet producers. Les Pavots (ldquo;the poppiesrdquo;) is a Bordeaux-style red (68 percent Cabernet Sauvignon, 17 percent Merlot and 15 percent Cabernet Franc) from a 23-acre vineyard located high above Knights Valley in eastern Sonoma County.
A well-ripened, opulent wine; itrsquo;s huge in blackcurrant and cassis flavors and elaborate oak. You can taste the barrels in the smoke, vanilla and spicy flavors. Acidity hanrsquo;t been integrated yet, nor have the dusty tannins. Itrsquo;s really good now, but is best left to soften and integrate through 2008.
The 2001 Les Pavots (72% Cabernet Sauvignon, 16% Merlot, 10% Cabernet Franc, and 2% Petit Verdot) is a thick, juicy, inky/purple-colored effort revealing compelling aromas of chocolate, licorice, cassis, and scorched earth. Deep and full-bodied, with a voluptuous texture, tremendous purity and density, it is the finest Les Pavots produced in the last four or five years. It should drink well young, yet age for 15+ years. Drink 2003ndash;2018.
Seductive spicy blackberry, floral and licorice flavors are simply fantastic in a wine thatrsquo;s rich in flavor yet delicately balanced and elegantly styled. This magnificent young wine gushes with ripe, fleshy Cabernet flavors, and while the flavors run deep, itrsquo;s the balance and suppleness of the tannins that let you savor the wealth of perfectly ripened grapes. Cabernet Sauvignon, Merlot, Cabernet Franc and Petit Verdot. Best from 2006 through 2012.
Made from a blend of Cabernet Sauvignon, Cabernet Franc, and Malbec, it displays an impressive, opaque ruby/purple color, followed by a superb nose of jammy black fruits, minerals, herbs and spices. The wine is full-bodied and rich, with exceptional length and balance, as well as gorgeously extracted flavors. It seems sweeter, more expansive,and deeper than when tasted last year. One of the top efforts of the vintage, it is another compelling Cabernet Sauvignon from this winery. Although accessible, Les Pavots possesses enough tannin and extract to merit 4ndash;5 years of cellaring; it will last for 20ndash;25 years. Once again, Les Pavots combines the best of the rich, ripe California fruit with a Bordeaux-like elegance and complexity.
The dense purple-colored 1999 Les Pavots exhibits sweet aromas of cassis, tapenade, cherries, licorice, and subtle wood. Medium-bodied, with a cool climate textural profile, noticeable tannin, and a Bordeaux-like finish, it will be drinkable between 2004ndash;2015.
A wine of enormous intensity, concentration and complexity, itrsquo;s packed with crisp, firm currant, spice, cedar, tar and wild berry flavors, and the finish just goes on and on. Best on the aftertaste, where the flavors fold together ever so nicely. Best from 2001 through 2010.

Almost black in color with a deep red edge, 2006 Les Pavots reveals a profound bouquet of black cherry, licorice, black currant, blueberry pie, and blackberry, combined with chocolate, vanilla, coffee, black tea, subtle spice notes of cloves and cinnamon and its distinctive touch of “garrigue.” Very full-bodied, concentrated yet graceful, the wine confirms the same rich, ripe fruit impressions on the palate with spice and black truffle. The mouth feel is massive and round with silky tannins and hints of mocha leading to a very long finish. Will benefit from three years of cellaring and age gracefully for two decades or more
