Peter Michael 'Les Pavots' Knight's Valley Bordeaux Blend 2000
The distinctive aromas and flavors of our proprietary blend of Cabernet Sauvignon, Cabernet Franc and Merlot exhibits its hillside origin on the slopes of Mt. St. Helena in Knights Valley. Rocky, rhyolitic soils created through volcanic activity millennia ago contribute a mineral richness and add to the wine's complexity. Spanning 23 acres, Les Pavots ascends to an elevation of nearly 1,800 feet. Merlot and Cabernet Franc grow on the cool upper slopes and Cabernet Sauvignon grows just below. Grapes are handpicked in late October and then cold soaked in a tank for almost four days before fermentation.Traditional Bordeaux vinification fermentation contributes to the intense color extraction and soft, round tannins. Our Les Pavots was aged in small French oak barrels for 20 months. Bottled in July 2002, this wine was aged for 8 months before release.

Seductive spicy blackberry, floral and licorice flavors are simply fantastic in a wine that's rich in flavor yet delicately balanced and elegantly styled. This magnificent young wine gushes with ripe, fleshy Cabernet flavors, and while the flavors run deep, it's the balance and suppleness of the tannins that let you savor the wealth of perfectly ripened grapes. Cabernet Sauvignon, Merlot, Cabernet Franc and Petit Verdot. Best from 2006 through 2012.
The 1998 Les Pavots (80% Cabernet Sauvignon, 11% Merlot, and 9% Cabernet Franc) was produced from minuscule yields of 1.3 tons of fruit per acre. It exhibits a dense ruby/purple color in addition to aromas of melted fudge, cocoa, tobacco, and black currant fruit. In the mouth, the wine is medium to full-bodied, with firm tannin, and a compressed, moderately long finish. 1998 was a difficult vintage, but Les Pavots has turned out well. Nevertheless, it is a successful effort in a challenging year. Anticipated maturity: 2003-2014.
The 2001 Les Pavots (72% Cabernet Sauvignon, 16% Merlot, 10% Cabernet Franc, and 2% Petit Verdot) is a thick, juicy, inky/purple-colored effort revealing compelling aromas of chocolate, licorice, cassis, and scorched earth. Deep and full-bodied, with a voluptuous texture, tremendous purity and density, it is the finest Les Pavots produced in the last four or five years. It should drink well young, yet age for 15+ years. Drink 2003-2018.
A rich, earthy, decadent style, with a loamy core of tannins underneath an equally earthy core of currant, tobacco, leather and spice. Dry, potent tannins coat the palate on the finish, with plenty of concentrated flavors. Cabernet Sauvignon, Cabernet Franc and Merlot. Best from 2004 through 2012.
Founded in 1982 and having established a reputation for Chardonnay early on, Peter Michael Winery today has become one of California's finest Cabernet producers. Les Pavots ("the poppies") is a Bordeaux-style red (68 percent Cabernet Sauvignon, 17 percent Merlot and 15 percent Cabernet Franc) from a 23-acre vineyard located high above Knights Valley in eastern Sonoma County.
A monumental effort is the 2002 Les Pavots, a blend of 71% Cabernet Sauvignon, 12% Merlot, 10% Cabernet Franc, and 7% Petit Verdot. And there is even more good news - there are 2,800 cases of this exceptional wine. Dense purple-colored with an extraordinary nose of melted licorice, white chocolate, creme de cassis, licorice, and incense, the wine hits the palate with a silky opulence, and marvelous, full-bodied power, but it is light on its feet, with great delineation, vibrancy, and freshness. Superb purity and a finish that goes on for 50+ seconds is the stuff of modern-day California legends. This beauty is already beginning to age well yet should last easily for 18-22 years. Drink 2005-2027.
Saturated medium ruby. A fruit bomb on the nose: cassis, black raspberry, licorice and cocoa powder. Then lush, fat and deep; creamier and more succulent than the 2001, but less refined at this early stage. Finishes with substantial, sweet tannins. This will be a somewhat rounder, softer wine that will reach full maturity earlier than the 2001. The pH here is a tad higher than that of the 2001: 4.01, vs. 3.99.

The 2000 Les Pavots is quick to show its signature aromas of blueberry, coffee, sweet tobacco, vanilla and red cedar join a ripe currant extract. The tannins offer enough structure for aging while sustaining an enjoyable full body. This wine will mature for the next 5-10 years.
