Peter Michael Les Pavots(2001)

The 2001 growing season began with the coldest spring frosts in winery history, which lowered yields by more than 1/3. A hot May and June followed allowing the vines to “catch up.” By August the weather evened out and a moderate, dry and sunny September and October brought slow sugar development, small berry size and great concentrations of flavor.

Ideal October weather obliged a relaxed and precise harvest. As individual vine rows within the Les Pavots vineyard attained peak maturity the fruit was hand picked in the cool of morning and brought down the mountain to the winery. read more...

Number 5 on Wine Spectator Top 100 Wines of 2004! The 2001 Les Pavots (72% Cabernet Sauvignon, 16% Merlot, 10% Cabernet Franc, and 2% Petit Verdot) is a thick, juicy, inky/purple-colored effort revealing compelling aromas of chocolate, licorice, cassis, and scorched earth. Deep and full-bodied, with a voluptuous texture, tremendous purity and density, it is the finest Les Pavots produced in the last four or five years. It should drink well young, yet age for 15+ years.
