Penfolds Thomas Hyland Cabernet Sauvignon 2006
Wine Tasting Notes This wine shows a strong depth of color, dark plum with reds and a crimson edge. The nose shows an aromatic and perfumed lift with a dark, almost inky Cabernet character of black fruits, blackcurrant and cassis. Spicy Notes of coffee, mocha and black olives from used French and American oak hogsheads complete the infusion. flavors of dark chocolate, dark berries and wild fruits attack the palate which has a sweet, rich, dense middle that gives a full flavor; thick, warm and generous to the finish. The balanced oak regime offers lovely spice flavors and chalky style tannins give a minerality to the structure.
The Thomas Hyland range of wines by Penfolds is named for the Victorian Civil Service officer who married Georgina, daughter of Australian winery founders Mary and Christopher Penfold. Thomas Francis Hyland took over the winery in 1895 after their passing and brought it to new levels of commercial success. The wines are mostly produced in the Adelaide region of Australia, where the winery was first established in 1844.
