Winemaker's Notes:

Deep crimson to brick red. Classic cassis, roasted chestnut, leafy, green pea, asparagus aromas. Fresh and intense but quite soupy. Delicious, roasted chestnut, praline flavours and fine, loose-knit, chocolatey tannins. Finishes long and sweet with bitter tea leaf, sage notes. Lovely mid-palate buoyancy and richness. Drinking superbly now.

  Tired of boring old wines from Australia? No? Then you can probably thank Penfolds Wines. Penfolds, founded in 1844 by Mary and Dr. Penfold (Mary gets top billing since she took care of most of the early management and winemaking responsibilities), has completely revolutionized not only its own product lines throughout the years, but also many wines in Australia as a whole. The wine produced by Penfolds was originally prescribed as tonic wines for anaemic patients, with the wine made from Grenache. By 1870, with 60 acres under vine, they were producing many more wines. In the 1920s and 1930s, Penfolds was known for its fortified wine, like many other wineries in the area. 1943 marked the start of a massive expansion for Penfolds Winery, with first the acquisition of Auldana Vineyard and its winery, and then the purchase of Kalimna Vineyard in 1945. By the end of the decade, they owned vineyards in McLaren Vale, Griffith, the Hunter Valley, and Minchinbury. Around the same time, winemaker Max Schubert returned from oversees with a completely new vision for the future of the winery. In the 50s, he started experimenting with the red wine he called Grange, which is a mix of primarily Shiraz and a little Cabernet Sauvignon, and by the 1960s the wine had spread across the Australian wine industry. Not wanting to stop with merely one of the most successful wine projects in the history of Australia, Penfolds Wines started the “White Grange” project in the 1990s, leading to the immensely popular and publicized release of the Penfolds Yattarna Chardonnay. Peter Gago became their Chief Winemaker in 2002, and he, along with three winemakers in charge of red wine and one in charge of white, continue the tradition of experimentation and evolution. Find this a little too full of fruit and not quite as structured as the very best years. Don't get me wrong, it is a great Australia wine, but my palate prefers a slightly more structure and focus ala 1996.

Brambly red fruit and dried leaves on the nose along with cedar. Great structure. It really grabs your palate mid-way through. Cedary red fruit, currant, raspberry, licorice. Really nice and still has some youthful vibrancy. 93 pts. 5/26/12

Made from Coonawarra, Padthaway, Barossa, Wrattonbully and Adelaide Hills fruit and aged 14 months is 100% new American oak hogsheads, the deep, vibrant purple colored 2012 Bin 707 Cabernet Sauvignon opens to lovely crème de cassis notes with some kirsch accents plus violets, cedar and menthol nuances. At the moment the oak stands out on the palate so it needs more time to integrate, but otherwise it is quite minty, has balanced acid though is very punchy and it is bursting with fruit through the very long, firm finish.

Penfolds’ most ambitious cabernet sauvignon, this wine includes fruit from Coonawarra, Padthaway, Barossa, Wrattonbully and Adelaide Hills, finishing its fermentation in new American oak hogsheads. It includes old-vine fruit from Kalimna — Block 41 planted in 1955 and Block 42, dating to the 1880s, possibly the oldest cabernet vines in the world. That said, it’s more about power than grace for now, a sleek wine with tension in its structure and the roast coffee scents of oak dominating the finish. Brisk and gripping even after the bottle has been opened for two days, this will need a decade or more to resolve.

Vibrant, focused and elegant, but needs time to bring everything together. Offers deep flavors of currant, blackberry, potpourri and spice that weave together seamlessly against a gentle grip of tannins, expanding beautifully on the long and expressive finish. Best from 2017 through 2030. 990 cases imported.

Glass-staining ruby. Powerful smoky aromas of singed plum cassis cherry-vanilla and candied rose with a peppery topnote. Densely packed dark fruit flavors display liqueur-like intensity and pick up licorice spicecake and floral pastille nuances with air. Youthfully firm tannins give shape and grip to an expansive sweet wonderfully persistent finish. Stephen Tanzers IWC.

Aromen von dunklen Beeren und Gewürzen, dazu ein Hauch von Nüssen , Schokolade und Malz. Vollmundig, reichhaltig und ausgeglichen. Die Eiche wirkt fast cremig am Gaumen, erinnernd an Nougat und spielen in perfekter Harmonie mit dezenten Fruchtaromen. Ein muskulöser Wein mit kraftvoller und definierter Struktur mit präsenten, aber reifen und geschmeidigen Tanninen.
