Food Pairings for Penfolds Bin 28 Shiraz Kal
Delicate black cherry and rare cooked beef leap from the glass at first opening. Asparagus, leafy greens and earth intermingle over time. The palate matches the nose with rich tastes of beef and black cherry, adding hints of fresh spinach and cut garden greens to garnish the wilder flavors. Raspberry and red fruit high notes add to the wine’s excellent vertical array, and a zingy acidity sustains a moderately lengthy finish. Subtle tannins provide structured dryness up front and a velvety mouthfeel, while tangy fruits create salivation on the sides of the tongue, and then ooze forward to fill the bowl of emptied expectancy. Still evolving at four hours, with new anise, spice and cologne aromas, plus added flavor of licorice and increased tang on the palate’s finish. A terrific value.

2004 Penfolds Shiraz Kalimna Bin 28 South Australia90ptsRP "Penfolds' Shiraz lineup is impressive. Leading off is the 2004 Shiraz "Kalimna Bin 28". Purple colored, it has an attractive nose of smoke, grilled meat, and blueberry. Medium to full-bodied, it is a straightforward Shiraz with loads of flavor, good balance, and a moderately long finish. It is a very good value." winemaker comments: "A deepened crimson with a purple core. The nose is complex and beguiling, with notes of demi-glace and roasting pan juices, beneath scents of pipe tobacco, vanilla and pencil shavings oak - much more than just a simple varietal offering. The palate is full-bodied, refined and taut showing dark, black conserve fruit flavours with Satsuma plum notes to the fore. Further liqueur chocolate and spice flavours are impregnated by overt, chewy and ripe tannins. To sum up, the integrated fruit, oak and acid loudly proclaim harmony and balance. The 2004 vintage conditions were first class and rank alongside and recent exemplary vintage. This, the 2004 vintage, is a real Bin 28, showing polish, poise and pedigree. By all means, drink whenever, but please save some for the cellar, and the 2010s!"
