Pellegrini Carignane Redwood Valley (2005)

The winemaking protocol for this wine is similar to how we make Pinot Noir and Zinfandel. Small open top tanks, about 10% whole clusters with the balance of the fruit lightly crushed, a three- day cold maceration before yeast inoculation, hand punch downs for two weeks, and in this case, pressed just before dryness. The wine was aged for nine months in a combination of three to four-year old French and American oak barrels. The wine was lightly filtered before bottling on August 18, 2006.
