Pearly Bay Celebration NV
Harvested at optimal ripeness from late January through mid-February, the grapes were destalked before crush. Each varietal was pressed and vinified separately. Fermentation took place in stainless steel tanks at a controlled temperature of 15°C using selected yeasts. The resulting wines were then blended in pressure-controlled tanks and injected with CO2 gas to create carbonation. A minimal quantity of red wine was blended in order to provide color and depth of flavor.
Food Pairings for Pearly Bay Celebration
Red berry and peach aromas and flavors carry through from the nose to the palate. Small bubbles tingle the palate. It is pleasantly sweet with a soft finish.
