Paul Hobbs 2011 Cabernet Sauvignon is a blend of 95% Cabernet Sauvignon, 3% Petit Verdot, 1% Malbec and 1% Cabernet Franc aged 20 months in French oak (65% new). This Napa Valley red is Bordeaux-like in character and offers aromas of cassis, lavender, fresh crushed sage, black olive and cedar on the nose. On the palate, generous, savory layers of black fig, dark chocolate, tobacco leaf, and graphite with excellent structure and a long finish."The 2011 Cabernet Sauvignon jumps from the glass with sweet spices, cloves, menthol, plums, iron, red cherries and tobacco. A soft, supple Cabernet for the year, the 2011 has lovely balance, not to mention considerable early appeal. The finish is long, creamy and expressive. No, he wanted to create his very own grapes, on his own land. This passion led to the creation of Paul Hobbs Winery in 1991. Focused in the Russian River Valley, each harvest is meticulously captured so as to extract the very best from each grape. This passion started with only three wines in the winery’s repertoire: Chardonnay, Pinot Noir, and Cabernet Sauvignon, but the winery quickly grew to produce over a dozen wines.
