Paul Hobbs Cabernet Sauvignon St. Helena Beckstoffer Dr. Crane Vineyard 2007

Winemaker's Notes:

The wine we produce from this spectacular site located above the fog line atop the eastern slopes of Napa Valley possesses the purity and focus of mountain fruit and the muscularity of a warm climate cabernet. Deep garnet in color, it is aromatic with fresh red and black berries, dried herbs and a touch of red licorice. Firm, ripe tannins are prominent as precise, concentrated flavors of cassis, black plums and graphite coat the mouth. Balanced acidity and a touch of vanillin complement the fruit and tannins over a never-ending finish.

Paul wasn’t satisfied just becoming Head Enologist of Robert Mondavi’s Opus One in 1981, or becoming Vice-President/Winemaker of Simi Winery in 1989. No, he wanted to create his very own grapes, on his own land. This passion led to the creation of Paul Hobbs Winery in 1991. Focused in the Russian River Valley, each harvest is meticulously captured so as to extract the very best from each grape. This passion started with only three wines in the winery’s repertoire: Chardonnay, Pinot Noir, and Cabernet Sauvignon, but the winery quickly grew to produce over a dozen wines. Today, Paul Hobbs still consults other wineries around the globe, including wineries in Chile, Argentina, and Hungary. Read less

WE 97pts. - WS 93 WA 92 Pts - According To Robert Parker -Performing better than it did last year, it needs 5-6 years of bottle age, and should keep for 25-30 years. Its dense purple color is followed by notes of wet stones, smoked herbs, black currants, and ink. Deep, rich, backward, and ageworthy, it should be forgotten for a few years, and drunk over the following three decades. The least expensive effort is the opaque purple-colored 2007 Cabernet Sauvignon Napa. A blockbuster, it offers up classic notes of charcoal, subtle smoke, black currants, black berries, lead pencil shavings, and earth. This deep, opulent, full-bodied Cabernet possesses terrific purity as well as length. It should drink well for 15+ years.

The 2006 Cabernet Sauvignon Napa offers plenty of blackberry and black currant fruit intermixed with licorice, smoke, and earthy undertones. It is ideal for consuming over the next decade.

Ruby-red. Bright, primary nose features black cherry and minerals. Currant and chocolate flavors offer more thorough sweetness than the 2003 version, with harmonious acidity giving the wine good shape and grip. Finishes fresh, sweet and persistent.

Ruby-red. Bright red berry and cherry aromas are complemented by dusty rose and mineral notes. Sweet raspberry and cherry flavors are smooth in texture and supported by fine-grained tannins. The red fruit notes linger impressively on the precise finish.

Inky ruby. Highly perfumed aromas of blackberry, cassis, black pepper and licorice. Broad, sweet and lush, with a strong spicy character to the juicy blackberry and spicecake flavors. As deep and fleshy as this is, it also delivers energetic cut. Very long on the finish, with silky, seamless tannins lending focus.
