From the amazing Beckstoffer To-Kalon Vineyard, Hobbs 2007 Cabernet Sauvignon is a slightly more opulent, broader, savory effort that comes close to the perfect 2002. The 2007 has more noticeable tannin than the 2002 did at the same stage as well as more obvious minerality, but notes of graphite, black currant liqueur, licorice, cedar, and spice box are found in this full-bodied, multidimensional, fabulously concentrated wine. It was aged in 100% new Taransaud French oak barrels. Give it 5-6 years of cellaring, and drink it over the following three

Pure, rich and concentrated, this is flamboyant, offering depth, range of flavor, structure and depth. The currant and toasty oak flavors are intense and focused without being overdone.

The 2001 Cabernet Sauvignon Napa (2,980 cases) possesses big, sweet, smoky oak, cedary, blackberry, and cassis aromas as well as flavors offered in a rich, voluptuous, full-bodied style. While it is already deliciously drinkable (surprising for a 2001), there is abundant tannin lurking underneath the surface, but it is well-concealed by a wealth of fruit. This selection comes from four sources, the Crane, To-Kalon, Hyde, and Stagecoach vineyards. Drink it over the next 10ndash;15 years, although it may last even longer. Drink 2003ndash;2018.

It is obvious Paul Hobbs prefers the influence of Taransaud cooperage on his Bordeaux varietals because they tend to give the wines a chocolatey character, and that is seen in the 2002 Cabernet Sauvignon Napa (3,120 cases), a Cabernet Sauvignon with terrific concentration, remarkable opulence, and layers of cassis- and licorice-infused tobacco leaf notes that just cascade over the palate with an unctuous texture. The wealth of fruit and concentration hides some relatively serious tannin in this large-scaled wine. Anticipated maturity: 2006ndash;2020.

Notable for its richness, intensity, focus and persistence, this full-bodied red shows spicy currant, black cherry and wild berry fruit that's supple and layered, yet light on its feet, with gentle tannins. Drink now through 2016. 5,653 cases made. -... Wine Spectator. A Cabernet Sauvignon wine from California in USA. 2007 Paul Hobbs Cabernet Sauvignon 750ml

Red-ruby. Bitter cherry, blackberry, creosote and oak spices on the nose. Supple, fruit-driven wine offers tangy flavors of cassis, blackberry and flowers, and good texture. The winersquo;s tannins build with aeration, and the finish turned increasingly oaky.

Wonderful richness, with a silky texture and gobs of currant, mineral, cedar, plum, and earthy flavors that are concentrated and sharply focused. Finishes with a gush of mocha and rich fruit. Best from 2003 through 2010.

Winemaker's Notes:

The wine we produce from this spectacular site located above the fog line atop the eastern slopes of Napa Valley possesses the purity and focus of mountain fruit and the muscularity of a warm climate cabernet. Deep garnet in color, it is aromatic with fresh red and black berries, dried herbs and a touch of red licorice. Firm, ripe tannins are prominent as precise, concentrated flavors of cassis, black plums and graphite coat the mouth. Balanced acidity and a touch of vanillin complement the fruit and tannins over a never-ending finish.
