Suggested Recipe Pairing presented by
Coconut Rice Sweet Potato Cheesecake

RiceSelect's creamy Arborio gets blended with sweet potato, coconut milk and vanilla to create this decadent cheesecake. Pairs well with Saunternes; a white dessert wine that has hints of coconut from aging in oak barrels.

Under the leadership of Paul Dolan, former President of Fetzer Vineyards, Parducci are committed to socially responsible and environmentally sound agriculture and winemaking methods while working to enhance the quality, recognition and perception of Mendocino County Wines. The winery, the oldest in Mendocino, was certified as organic by CCOF in and all vineyards are either certified as or in transition to organic and biodynamic status. 150 acres practice Fish Friendly Farming whereby the use of pesticides and other controls which could be damaging to fish, are kept to an absolute minimum. Bob Swain, who has been Parduccis winemaker since 1997, continues at the winery, making the shift from conventional operations to organic farming and sustainable business practices. Says Paul Dolan; We are clear about what we want; an environmentally and socially conscious winery making great wines from Mendocino. We want to have fun, reaching out to new audiences with each wine carrying a fresh look and message Grapes: 94% Zinfandel, 3% Syrah and 3% Petit Sirah (organically grown) Vineyards: 53% Mendocino County, 47% Amador County Vinification: Handcrafted exclusively from organically grown grapes and also vinified organically, the wine was blended with small amounts of organic Syrah and Petit Sirah and ages 14 months in American and French oak. Alcohol: 14.9% Taste: Burst from the glass with jammy, blackberry and brambleberry aromas, augmented by tantalizing spice and earth tones. On the palate, the wine is rich, deep and juicy with big, spicy, blackberry and black raspberry flavours that are beautifully balanced and enriched by subtle chocolate tones. Serve: Enjoy this youthful, exuberant Zinfandel with grilled red meats and sausages, hearty red-sauce pastas, barbequed ribs and flavoured cheeses.

Winemaker's Notes:

"Hawks circle above ridge top vineyards whose red soil produces the unique fruit for this Zinfandel. The older site offers a dis- tinctive spice and leanness needed to keep the younger, bold vines in check. Together these opposites attract into a perfect marriage of jammy berry, pepper, and orange marmalade." -Winery
