Pascal Jolivet Sauvignon Blanc Sancerre Exception 2007

Winemaker's Notes:

Focused and restrained yet intense with excellent reserve; very youthful and undeveloped; subtle flinty-stony notes with grapefruit and pear highlights. Great intensity and definition; concentrated; medium to full weight; tightly wound at this stage with steely acidity and a lingering mineral tone. A high class Sancerre. Ideally allow to mature for 3-5 years or drink now with freshwater fish; shellfish such as raw or poached oysters; Dover sole or turbot with butter and fresh herbs.
