Parker Estate First Growth 2004

Winemaker's Notes:

Sourced from selected vineyards planted in 1990 in the classic shallow Coonawarra Terra-Rossa soil over limestone rock. Vintage 2004 was cool and late ripening. Extensive fruit thinning was carried out prior to veraison to limit the yields and increase concentration and ripeness in the remaining berries. Harvest took place between 28th April and 5th May, yielding 3 tonnes/acre. The resulting wine is a deep red colour, with purple tinges. The nose shows lifted liquorice and blackcurrant fruit with some perfumed of violets and toasted vanilla oak. The palate is firm and structured with mineral and blackcurrant fruit and a firm tannin finish. At its best with rare beef, duck, venison or boar. Divine with porterhouse braised in cabernet, or pan fried venison fillet with a cassis sauce.
