Food Pairings for Paras Vineyard Merlot Mt. Veeder
Needs to breathe about three hours to tame alcohol on the nose up front. Rich red fruit, including strawberries, raspberries, and cherries, eventually emerge supported by soft, velvety tannins. Notes of juniper, oak and hints of caramel join the bright berry medley. Complexity increases even more with the addition of blueberry, blackberry, currants, and touches of lilac blossoms and fish. Opens slowly, but a patient palate is rewarded at 3 – 4 hours. A plum, raspberry and cherry trio plays a fugue of recurring berry combinations, counterpointed by a medley of more astringent notes of sour apple, pear and tobacco, alternating between sweet and bitter without either becoming overbearing or contaminating the other. Velvety tannins help sustain a lovely theme of pure, full fruitiness as the dominant expression. Has episodes of thinner, tighter, more bitter and less satisfying acidity at 4+ hours.
