- The winemaker for this new friends and family operation is Brian Loring (see above). The oak regimen is 50% new and 50% used French wood over a 10 month élevage period. For further information point your browser to http://www.paliwineco.com or call 310-927-0522 Note: 300 cases produced from Santa Barbara County fruit bottled at 14.1% A lovely mix of upper and middle register mostly red berry fruit and red pinot aromas combine with more obviously read more...structured and firmer flavors that possess a dusty and intense quality that is definitely more soil and mineral-inflected than any of the preceding wines in the Pali range. I quite like this and what is unusual is the subtle touch of austerity on the finale. To be clear, this isn't necessarily typical but the style and character of the wine are definitely interesting.
