Pajzos Antaloczy Tokaj Furmint Hungary 2007

Furmint is so famous for being the principle grape in Hungary's signature dessert wine Tokaji, that many times people forget that it can make magnificent dry white wines as well. The Pajzos Antaloczy (don't worry about pronouncing that - just ask for "that dry Furmint") is bracing with stony minerality and racy acidity, but underneath the peach and green apple notes make a subtle appearance. Perfect for shellfish (especially oysters), or white fish such as halibut, this wine makes an excellent alternative to your favorite dry Riesling or Gewürztraminer.

Round, yet with a crisp underlying acidity framing flavors of apple, melon and citrus. There's a salty minerally finish. Drink now.

This is the second vintage of a dry wine from Pajzos, an estate owned by the Laborde family of Chateau Clinet in Bordeaux. Powerfully marked by minerality, the sweet pear fruit feels almost as if it's been frozen in cold steel. An herbal note, like chamomile, runs through it, a gentle note in what's otherwise an uncompromising wine. Pull out the pork loin, barded with bacon, or other rich dishes.
