Food Pairings for Owl Ridge Wines Cabernet Sauvignon Dry Creek Valley Passalacqua Vineyard
Harvest took place in the first week of October. The wine was destemmed and crushed, then cold-soaked for 48 hours before being inoculated with yeast. Ferment was long and steady with temperatures maxing out at 85 degrees. The wine was left on the skins for an additional two weeks after the completion of fermentation to give the wine a round rich texture. The wine was then pressed off the skins and put to barrel. The wine was barrel-aged in 100% premium French oak, with 40% new barrels, principally tight-grained oak from the best French forests. The final wine is richly flavored with black currant, blackberry and anise flavors and hints of cocoa, cured tobacco leaf and anise. The entry is sweet with a silky middle. Overall, the wine is rich, seductive and well structured. The tannins are balanced. While the wine is enjoyable now, we think it will age well for many years.
