Ovene Winery Cabernet Sauvignon San Antonio Valley 2004

Winemaker's Notes:

Cabernet Sauvignon Tasting Notes: This rich and spicy Cabernet Sauvignon is a blend of a number of different clones of Cabernet Sauvignon and Cabernet Franc. The grapes where harvested from the San Antonio Appellation, which lies within the foothills that lead up to the Santa Lucia mountains. The different clones, clone 4, 337 where blended together with the Cabernet Franc after fermentation in small open top fermenters. This wine was then barrel aged for over 24 months in French and American oak barrels. This extended period in barrel allowed the individual characteristics to age in harmony. Winemakers Notes: On the day of harvest the grapes were picked early in the morning and then destemmed into small open top fermenters. Before fermentation, the grapes were “cold soaked” just below the temperature where yeast become active to allow for enhanced concentration of water-soluble compounds. The grapes were then slowly fermented with native and ICV-GRE yeast for a period of 14 days where multiple sets of hand punch downs mixed the must and controlled fermentation temperature. The free run was then drained into French and American oak barrels and the must was pressed into barrel. The wine then completed secondary fermentation in barrel then allowed to age for 24 months before bottling unfiltered. Ovene Winery is the culmination of a lifetime of our family’s passion for food and wine. Ovene is dedicated to my Grandmother Merthel Ovene McConnel. Granny was an inspiration to several generations who taught us the love of God, family values, traditions and a passion for food and wine. She was known as Groovy Granny as we were growing up and told us we could accomplish anything we set our minds to. She blessed this venture despite her failing health at 94 and passed away the day after we received our first grapes and bonded winery license. We are blessed to dedicate Ovene Winery to all the inspirational women in our lives. Groovy Granny always said to save the best for last. This puzzle is now complete. The only piece missing is you. killer cab with 24% cab franc... great balance
