Suggested Recipe Pairing presented by
Coconut Rice Sweet Potato Cheesecake

RiceSelect's creamy Arborio gets blended with sweet potato, coconut milk and vanilla to create this decadent cheesecake. Pairs well with Saunternes; a white dessert wine that has hints of coconut from aging in oak barrels.

I had the pleasure to share a bottle with a friend. I hate to admit that this was the best bottle of wine I have ever enjoyed. Velvet smooth, warming and rich with a spicy bite and hints of anise.

I could write a sonnet about this wine. It is poetry. One of my personal favorite special occasion wines. I always give myself a bottle for Christmas. Thank you Santa.

My favorite bottle in my whole collection. It is notably better then just about everything else...the flavor is deep and the finish is long. You can taste the difference of this wine even if it's the last one opened.

2005 Opus One showing a lustrous dark ruby, presents aromas of violets, cedar, black tea leaves, black pepper and brioche. A soft, creamy entry gives way to a concentrated mid-palate that expands in the mouth and lingers on the finish. Elements of

The opaque purple-hued 2005 exhibits an extraordinary nose of violets, creme de cassis, charcoal, and spring flowers. Gorgeously pure, opulently full-bodied, with sweet tannins, superb concentration, and a low acid, ripe, tannic finish, it tastes lik... Robert Parker's Wine Advocate. A wine of subtlety and grace, Opus One doesn t rush to reveal itself; and neither does the winery. One thousand barrels are arranged side by side in the Grand Chai, where the wine is nurtured and aged in new French oak during the first year of its life.

Winemaker's Notes:

Frequent spring rains through the month of May led to a year of cool temperatures and slow ripening, with an extended harvest that ended on November 2nd. A voluptuous garnet, the 2005 Opus One offers concentrated aromas of blueberry, rose petals, white truffle, licorice and nutmeg. Flavors of cassis, black olives, raspberry and dark chocolate culminate in a long and luscious finish.
