A light, fresh, dry red made in a special manner. The traditional practice, called the Governo, consists of a slow refermentation of the wine. This second fermentation is effected by adding a 5-10% concentration of must in late December. The result of the Governo is increased glycerin, which enhances the fruity roundness and freshness of the wine. Opici Chianti is a vintage-dated D.O.C.G. dry red which can be enjoyed young, even chilled.. Primarily Sangiovese, with some red Canaiolo and a bit of white Trebbiano and Malvasia.. A bright, light ruby color, a touch of violets in the nose, a fresh, crisp, dry taste and a clean finish.. Fast foods, chicken, burgers, pizza, pasta with tomato based sauces.
