Food Pairings for Olga Raffault Chinon "Les Picasses"
Chinon, in the Loire Valley in France, is known for their beautiful Cabernet Franc red wines. Cabernet Franc is one of parents of Caberent Sauvignon, but it makes wines that are lighter in body, smoother tannins, and lovely aromatics; shows incredible complexity with age like Cabernet Sauvignon. This 2007 Olga Raffault’s ‘Les Picasses’ has a light garnet color with depth of fruit flavor and complexity. Its style is earthy, with hints of orange zest and deep, dark cherry flavor. The tannins are soft, but present, and the mineral complexity in the finish is superb.
