Obsidian Ridge Cabernet Sauvignon Red Hills Lake County Obsidian Ridge Vineyard 2004
In 2004 we managed the tannins with gentle maceration techniques, favoring punchdowns to pumpovers. The result is a fleshy wine with fullness and weight but not the aggressive tannins of the prior vintage. The aromas are quintessentially Cabernet, with cassis, cedar and an apparent minerality. Finally, it is the spicy contribution of the barrels, with notable toast, clove and pipe tobacco flavors, that helps make the 2004 vintage so compelling.
I tried this wine recently with a vegetarian meal even though it was suggested to go with beef. It is awesome and has a robust flavor with a mellow finish.
