Noble Vines marries the most admired vine types with winemaking innovation to craft wines with concentrated flavors, silky fruit and supple tannins. The Delicato family creates the Noble Vines line. Named for the Dijon 6667 clone of Pinot Noir, best known for having much deeper color and more tannin than typical Pinot Noir, resulting in wines with great structure and black fruit flavors with spicy notes. The core of this wine is from their family-owned San Bernabe Vineyard, part of the San Bernabe AVA in Monterey County. It is one of the most diverse single vineyards in the world, with multiple microclimates varying in soil types and conditions. Warm days and cool nights with lots of wind & fog determine the perfect hangtime for 667 Pinot Noir. Additional fruit is sourced from vineyards in Monterey’s Santa Lucia Highlands and Arroyo Seco AVAs. Careful vinification techniques are used to bring out the best in this prime Pinot Noir fruit. Cold soak the for two to three days, using gentle pump-overs to bring out the color and flavor without extracting any bitter seed tannins. Then fermentation is it at cooler temperatures to lock in that deep color and flavor profile. After fermentation and aging in a combination of French and American oak, and blending in a few lots of additional clones that add specific aromatic qualities give it richness and complexity. The wine shows aromas of black cherry, earth and a touch of vanilla. Plush tannins and balanced acidity support core flavors of ripe Bing cherry, bittersweet cocoa powder, and delicate hints of sage.
