Noble Hill is unique wines from estate vines. We are a 30 hectare vineyard producing wines that are juicy yet austere, elegant, and above all unique to the place they are made. We make red wine, white wine and olive oil.

Sauvignon Blanc is all about retaining the light, refreshing, and ultimately elusive flavours contained in the skins. We aim for a light extraction before pressing, taking the unusual step of shrink wrapping our four ton press to keep the juice on the skins for a few extra minutes before going to tank. In 2011 we created a wine with a tight, crisp structure and notes of freshly cut gooseberries, melon, and nectarine. The wine has a refined balance between fruit and acidity, and an elegant finish.
