V ineyards & Winemaking: Harvested from a vineyard of red volcanic soil at an elevation over 2,000 ft, this is true high-elevation Cabernet. The grapes are crushed and fermented in stainless steel and then undergo approximately 8 to 10 months of oak-aging before bottling. Taste: Impeccably focused and tightly composed with fresh black currant flavors and a long, satisfying finish. This is a wine to serve with grilled lamb chops, or pizza with arugula, eggplant and mozzarella. Notes: The Red Hills rise from California’s Clear Lake where vineyards climb to over 2,000 feet. On these hills, cooler temperatures combine with the warm California sunshine to produce exquisitely balanced Cabernet Sauvignon with a generous aroma and classic texture. As good quality, reasonably priced Cabernet Sauvignon becomes hard to find in Napa, Sonoma and even Mendocino counties, the Red Hills of Lake County has attracted the attention of California’s top wineries.
