Vineyards & Winemaking: To make this wine, Cabernet Sauvignon and a bit of Malbec is harvested from a vineyard of red volcanic soil at an elevation over 2,000 ft. above sea level. The grapes are crushed and fermented in stainless steel and then undergo approximately ten months oak aging before bottling. Taste: Impeccably focused with indulgent amounts of fresh black currant aromas combined with a taught touch and a long, satisfying finish. This is a wine to try side-by-side grilled lamb chops with a cilantro and mint sauce, or pizza with arugula, eggplant and mozzarella.
