RiceSelect's creamy Arborio gets blended with sweet potato, coconut milk and vanilla to create this decadent cheesecake. Pairs well with Saunternes; a white dessert wine that has hints of coconut from aging in oak barrels.
Food Pairings for Newton Merlot Napa Unfiltered
The nose opens peppery, brushy and vegetal, with hints of lavender, cedar and cassis. The palate launches with a strong herbal base, including notes of alfalfa and oregano. Peppery heat on the back leads to a long finish. Well integrated tannins support evolving medleys of dark fruits, florals and herbs, Smooth and elegant, but not profound. There is a nice clarity in the wine that offsets its heaviness. At two hours, savory fruit begins to fill in the center, adding interest, breadth and balance. This wine peaks between four and five hours, and as the heat tames and integrates, more fruit emerges, leading to a more complex array of aromas and flavors. In its prime fifth hour, plum and currants join chocolate and mocha while a peppery zing continues through a smooth mouthfeel and a long, pleasant finish.
Rich, sweet, caramel aromas with crème brulee, butterscotch, almonds, a medley of red and dark fruits including cherry and blueberry, and a little smoke make for a lively symphony on the nose at opening. At two hours, earthy wafts of bell pepper, olives, pond greens, oak and moss ride waves of deep plum, with notes of floral following, including jasmine and rose. Following modest heat at 3 hours after uncorking, a silky, velvety mouthfeel coats the palate front to back, supporting a complex array of dark fruits and spices, including black cherry, blackberry, plum, dark chocolate, cocoa, crème brulee, almonds, white pepper, and tobacco. Layers of interest and complexity evolve with each sip. Integrated, balanced tannins. Elegant finish.

The 2005 Unfiltered Merlot is a beauty, dark ruby/purple with notes of cassis, plum, a hint of mocha, some truffle, and a long, full-bodied mouthfeel. There is tannin to shed, but the wine is fleshy, pure, and impressive. It should drink nicely for at least 15 or more years. ** Only 1 in Stock **
Intense focused and complex with excellent structure and pure cassis and black cherry-laced fruit that turns fleshy midpalate before the tannis firm up on the finish. The best Merlot from this producerin a while.
