Food Pairings for Newton Johnson Sauvignon Blanc
The focus of this wine is based on a vineyard component positioned on low yielding white Table Mountain Sandstone soils. Using neutral yeasts, it expresses very distinctive and concentrated fruit of asparagus, citrus, and some capsicum in a more minerally and flinty style. The clay/shale soils provide the Sauvignon with flavours on the riper side of the spectrum and more structure for a broader palate. The Semillon, naturally fermented, provides a more luxurious mouthfeel and adding to the complexity of the wine with its maturation on the lees. The grapes were picked on taste to retain the natural acidity. This wine was made in a style that would express the aging potential of Sauvignon Blanc.
