Soil: Chalky - Clayey<br/><br/>Growing Climate: Mild winters and hot dry springs and summers<br/><br/>Date of Harvest: September<br/><br/>Type of Harvest: By hand<br/><br/>Vinification Method: Wrapping soaking method for about 20 hours with the following extraction of the 30 % od the juice which is put to ferment at a controlled temperature of 13 °C.<br/><br/>Vinification Temperature: Best to serve at 10 - 12 °C<br/><br/>Alcohol Percentage: 13.1 %<br/><br/>Sugar Rate: 0-5 g/l
