Percentage Grape: 100% Syrah<br/><br/>Soil: Clay and limestone soils<br/><br/>Type of Harvest: Hand-harvested in mid-October then table-sorted three times before falling by gravity into a single, one-wine old Seguin-Moreau French oak tank<br/><br/>Vinification Method: After an 5-day cold soak @ 10° C, the juice was fermented in a single, one-wine old, 50-hl oak tank wherein cuvaison ran a full 60 days. Microbullage under the cap was done during fermentation.<br/><br/>Alcohol Percentage: 16 %
