This could get much better. Reminds me of a Coturri product It's all organic, complete with funky garbage can notes and all. Doesn't sound appealing does it. I'm betting that this will evolve into a fantastic wine.........or it won't. It's got loads of personality but probably not for everyone. Leave it alone for now and let it fester for a couple of years. An intriguing wine.

This is always one of our most approachable Cabernets and this is no exception. The color is dark; the nose is cassis, blackberries, plums and leather; and the finish is smooth and balanced.
Vineyard InformationThe 28-acre Chicken Ranch Vineyard is located on the northern border of the Rutherford appellation. Sustainable farming methods (including Biodynamic techniques on some blocks) accompanied by low yields and aggressive canopy management produce wines that are dark, dense and packed with "Rutherford Dust."WinemakingWhile some might describe the 2005 harvest as late starting, at the Chicken Ranch we ended our pick (no trick-or-treat) on Halloween. The rains held off and the weather was moderate, allowing for steady ripening of fruit and flavors. After a cold pre-soak, the grapes were fermented using the drain-and return method (delestage) favored by leading Bordeaux chateaux. In addition to increasing color and flavor, this process allows for the removal of seeds, which reduces astringency and produces more supple tannins. To further soften tannins and create a more generous texture, the wine was exposed to air during fermentation and barrel aging.Tasting NotesOne of our most approachable Cabernets, we think it just keeps getting better and better with continued farming improvements.
