Napa Reserve Cabernet Franc 2005

Varietal & Vineyard InformationFor centuries Cabernet Franc has always played a pivotal role in the blending of Bordeaux wines, and highly prized to make the impressive red wines of the Loire Valley. There are relatively few areas that can produce truly impressive Cabernet Franc. Our Cabernet Franc comes entirely from our small three-acre block at our Main Street Vineyard located just east of Highway 29 at the southern end of the St. Helena AVA. WinemakingAfter a cold pre-soak, the grapes were fermented using the rack-and-return method (delestage) favored by leading Bordeaux chateaux. In addition to increasing color and flavor, this process allows for the removal of seeds, which reduces astringency and produces more supple tannins. To further soften tannins and create a more generous texture, the wine was exposed to air during fermentation and barrel aging.Tasting & Chef NotesMost of the Cabernet Franc from our Main Street Vineyard is blended into our Meritage. As in its native Bordeaux, this thick skinned grape adds floral and earthy characteristics to the final blend. But, from time to time we bottle a small amount of this lesser known variety when it shows exceptional characteristics. This wine is garnet red in color with a classic varietal nose of herbal green tea leaves and flavors of red fruit—cherry, strawberry and raspberry. Enjoy with the heartiest of dishes –big juicy steaks, wild game, winter stews, and even meaty lasagna.WINE INFORMATION Composition: 88% Cabernet Franc, 12% Cabernet Sauvignon Alcohol: 14.3% T.A.:.62g/100ml pH: 3.65 Oak: 93% French Oak, 6% Hungarian, 1% American Oak Cases: 2009 6-pack cases Release Date: June 2007
