Food Pairings for Mw Colección Privada
Elaboration of the wine follows traditional methods with long, cold macerations, Alcoholic and malolactic fermentation performed at a controlled temperature, and aging for 13 months in French and American oak casks. The wine exhibits a cherry color with garnet hints. Aromas of mature fruits combine with toasts and spices. On the palate, it is delicious with a long finish with a excellent balance of acidity and alcohol.
A more extracted wine than its Syrah sibling, the Montalvo Colección Privada bottling blends Tempranillo with 25% Cabernet Sauvignon to create notes of chocolate, fresh and dried herbs, mint, fall leaves, and red cherry. The finish is dry and still evolving with decent length.
