About 30% in FO Sweet pear fruit on the nose is wrapped up in layers of fresh dough and powdered sugar with some floral top notes and kiwi fruit accents. This is a big wine, rich and powerful with earthy, deep flavors of apple strudel, walnut, French bread and a little preserved lemon. The texture is actually a touch soft and slightly creamy in the mouth, lending this a voluptuous feel with heirloom apple flavors on the backend that lead to a long, tart, simple finish. 89pts

Liked this wine a lot. I got hints of honey, yeast and citrus in the nose. Good acidity with honey (vanilla?) again in the taste with a long finish.
50/50 blend of Pinot Noir and Chardonnay. 30% barrel fermented some some malo-lactic fermentation. Blended from 12 lots. This wine received 92 points from the Wine Spectator and 94 from Wine Enthusiast. It's a delicate wine, with a lemony cream nose. Tart and crisp, with a soft biscuit flavor. Clean finish on a soft mousse of bubbles with good persistence.
Great flavor and structure! - WS Grand Tour 2011
Tasted again with consistent notes. Dough and yeasty aromas with hints of apple. Good acidity, with balance and long finish.
Lovely sparkling wine. Very well balanced with nice sharp acidity. Biscuit and dough aromas with some green apple. Medium finish with tartness and green apple.

This is the winery's top brut and what a gorgeous wine it is. Blended equally with Pinot Noir and Chardonnay it shows lime tangerine and strawberry flavors that are subtle and rich. The mousse is very fine giving it a silky texture. Beautiful to drink now. - S.H. Wine Enthusiast.
An exceptional sparkler with depth richness and finesse. Offers distinctive aromas of lemon fresh ginger and rubber that lead to flavors of custard raspberry and spice. The finish is crisp and lively. Drink now through 2014. From California.
There is the temptation to simply reference the DVX wine above because both entries are bright brisk chalky stony dare we say it "French-like" in their central personalities. If anything this one goes a touch further in its minerally austerity and is perhaps a touch less rich overall and in the end each is a magnificent bottle on its own. If we might be more likely to pair this one with fresh-shucked Miyagi or Kumomoto oysters it is because it truly hits the cracklingly crisp marker wi

Yellowing straw in color. The moderately intense bouquet brings French champagne to mind, as aromas of lemon meringue and brioche are easily noted. Fairly full bodied, this cuvée shows more structural aspects to its texture with dried citrus dominati... Chuck Hayward.
