This hugely popular, award winning wine offers touches of vanilla and melon, with firm acid and crisp structure. Medium bodied, with excellent mousse and a rich lingering finish, it is equally at home with a plate of iced oysters, fried calamari, chicken or a favorite pasta with a mild sauce. Mature aromas of char, yeast and flint with fruit notes in the background. Beautifully aged flavors of baked apple and flint are seamlessly integrated and deftly delivered. Long, dry, yeasty close. -Wine News

I enjoyed this lovely little sparkler at an event where Southeast Asian food was served. This brut performed well alone (glasses were passed out before food was brought out), but was even more impressive with the food. Don't be afraid to serve this alongside bold flavors because it will hold up really well.
