One of the stars in every vintage, the rsquo;89 Mouton defines class and concentration. An exciting wine, with thick, chewy cassis, mint and berry flavors, full, silky tannins and great harmony. Try after 2000.

High acidity provides great clarity and cut to the long floral smoothly tannic finish. This has improved considerably with bottle age. Harvested from September 18 through October 3 this Mouton offers amazing balance and fragrance. In 1990 Mouton was still using a heavy toast for its barriques which resulted in a smoky quality in the wines that was considered by many to be just as typical of Mouton as its opulence. "But we began turning things back in 1993 as we saw that our 1992 was a little unbalanced from the use of heavily toasted barrels

A magnificent wine thatrsquo;s ripe, powerful, seductive and amazingly deep. Massively concentrated and bursting with currant, plum, berry, cedar, chocolate and all sorts of exotic spice flavors, yet it keeps its balance, never going to excess. Lingers on the finish for minutes. A classic. Try to keep your hands off it until 2000 to 2010.

Moutonrsquo;s 1993 has turned out exceptionally well. the color is a healthy, brilliant purple, and the winersquo;s aromatic personality borders on ostentatious, with its display of cassis fruit, minerals, lead pencil, Asian spices, caramel, vanilla, and toasty oak. Spicy, with great purity of fruit, this medium-bodied wine exhibits fine density, an attractive inner core of ripeness and extraction, and a moderately tannic, surprisingly long finish. Tasted side by side against the tannins, stern, tough as nails 1990, I thought this to be the better wine, although Moutonrsquo;s raw materials in 1990 must have been significantly superior to those in 1993. Given the high percentage of Cabernet Sauvignon (84%), the 1993 will firm up and close, but there is plenty of sweet fruit in this unquestionably successful wine. Drink it over the next 15ndash;20 years.
