Grapes are hand-harvested in mid-April. Fermentation takes place in temperature-controlled stainless steel tanks. After the maceration period, 60% of the wine is aged for seven months in French and American (40/60) oak barrels. Best served with spicy entrees, steak and rich cheeses.
