Winemaker's Notes:

Pre-fermentation, cold maceration aim to extract sweet tannins, an essential prerogative for Sagrantino grapes. Fermentation is made under constant temperature through a modern system of temperature respecting tradition; pumpovers are frequent during the first days. After the first racking, wine settles inside stainless steel vats for few days, before going inside the barriques where it starts malolactic fermentation. Then it goes in big cask and starts ageing in bottle. The colour, ruby red, is very intense, impenetrable by light, dense.

In 2002 Luciano Cesarini, engineer passionate about agricolture, leaves several national and international roles in the energy and bank field to dedicate himself, with his brother Giuseppe and his wife Fiorella, to the wine world. They choose to build their winery on the ancient Flaminia road near the “Caupona of Bastardo”, where carters and other wayfarers sought private hospitality and where, it is said, lived a landlord who served a “sweet and perfumed” wine to people directed to Rome. The land register of 1312 and the Gregorian one of 1800 certify the millenarian vocation for wine of the company’s vineyards. Today the winery is considered one of the most technologically advanced in Europe. After having studied more than 50 winery around Europe, Luciano has projected several original systems, like electromagnetic field insulation and saturated air suction with daily recirculation. Thanks to these advanced technologies the bacterias cannot remain in the cellar, so the family can avoid to use chemistry. They do not use herbicide or chemicals neither in the vineyards: all the grapes are hand-picked and transported in small containers to avoid pre-fermentation, then these are manually selected and sorted on two vibrating tables. With SIGNAE the family wants to repropose the wine of the ancient Umbrian tradition: gentle like its hills, lasting like the character of its people. With the 9 web-cams of the winery is possible to see 24hours every day, via internet, what happens in the cellar and in the vineyards: this is the best quality certification, more than every other certification. Tasting Notes:

The bouquet is well-developed: from bramble jelly, varietal expression of Sagrantino, to black pepper, through vegetal facets, notes of cocoa, coffe, balsamic hints, pipe tobacco. In mouth you can feel the strength of this wine, freshness is remarkable and tannin is standing ready to face a long ageing. Soft, like all the wines of the company, it has a sweet finish and an unforgettable length.
