From 3 liter bottle Youthful and tight on the nose with a lovely core or ripe fruit that lays red currant notes over a bed of loamy soil tones and adds classic wood spice notes around the edges. This is classic California Cabernet, quite ripe but retaining the herbal element that gives it such a complex bouquet. On entry this is rich but a bit angular still. The wine has excellent depth and concentration, needing only some time to allow the rich currant fruit to fully emerge. Already there is a lot of fine detail on the palate with a subtle, savory complexity of herbs, roast meat, and boysenberries that emerges on the long finish. This is delicious. 94pts

Some dark fruits, (currant, dark cherry) and moderate tannins still carry this. A decent Mondaviish acid level. Maybe a bit short but otherwise a very enjoyable 12 year old everyday bottling. A nice surprise.

The nose showed a little cork, on the palate the immediate thing is the cork, but its not corked. It has some dusty fruit of dried cherries and cassis. There is some cedar box as well as some vanilla bean. it seemd a bit tired but was still enjoyable in its own right. Just a little out of whack.
Drinking a 1995 Mondavi Cab right now (Memorial Day weekend, 2009). I've cellared this beast since I got it in '97 or so, so it's always been treated well. Swept off the dust tonight on this guy rather than hitting some of the '94s. A little dusty but still some fruit on the nose. Smells better than it drinks at this age. Not a lot of complexity on the finish but still some good fruit in the front of the mouth. Only 13.5% alcohol, wish they still made Napa Cabs like that nowadays.

The 1995 Cabernet Sauvignon Reserve is slightly less impressive than when I tasted it last year, although still an outstanding wine. I may have caught it at a closed stage following bottling. There are 15,000-20,000 cases of Reserve Cabernet made, and in 1995, a quintessentially elegant style has been produced. The wine is less weighty than the 1994, 1991, or 1990. It has great promise and raw materials, with superb fruit and richness, medium body, and subtle lead pencil notes to go along with black currant, mineral, and pain grille scents and flavors. Based on this tasting, I would lower my overall rating, but it is still an exceptional California Cabernet Sauvignon made in a compellingly elegant, graceful style. Anticipated maturity: 2000-2018. Mondavi is adding a number of new regionally labeled Cabernet Sauvignons to their portfolio. In addition to their Oakville cuvee, they have a Stag's Leap District Cabernet, and a single vineyard wine from their famed To-Kalon plantation.

We gently destemmed the grapes and fermented the must with a combination of cultured and native yeast strains for greater vineyard expression. Upon completion of the primary fermentation, we gave the wine 31 days of extended skin contact to naturally soften tannins and enhance varietal complexity. The young wines were filled into French oak barrels to undergo a slow malo-lactic fermentation with native bacteria to add more layers of complexity. During aging, we barrel-to-barrel racked the wine five times to develop more expressive character and natural clarity. The wine was lightly fined with fresh egg whites and bottled without filtration to retain the full aroma and flavor intensity. Length of aging: 20 months; type of oak: 89% new, 11% once-used chateau-style French oak barrels.
Our 1995 Cabernet Sauvignon Reserve epitomizes the rich character and soft, approachable tannins of the vintage. With the season’s long “hang time,” the small berries reached the desired stage of ripeness where the tannins become very soft and supple. Even in its youth, this Reserve wine has tremendous fruit expression, depth and a velvety texture. The outstanding natural balance, enhanced by gentle vinification, promises great aging potential.
