Mondavi Reserve 96 Cabernet S95 P92 1995
We gently destemmed the grapes and fermented the must with a combination of cultured and native yeast strains for greater vineyard expression. Upon completion of the primary fermentation, we gave the wine 31 days of extended skin contact to naturally soften tannins and enhance varietal complexity. The young wines were filled into French oak barrels to undergo a slow malo-lactic fermentation with native bacteria to add more layers of complexity. During aging, we barrel-to-barrel racked the wine five times to develop more expressive character and natural clarity. The wine was lightly fined with fresh egg whites and bottled without filtration to retain the full aroma and flavor intensity. Length of aging: 20 months; type of oak: 89% new, 11% once-used chateau-style French oak barrels.

From 3 liter bottle Youthful and tight on the nose with a lovely core or ripe fruit that lays red currant notes over a bed of loamy soil tones and adds classic wood spice notes around the edges. This is classic California Cabernet, quite ripe but retaining the herbal element that gives it such a complex bouquet. On entry this is rich but a bit angular still. The wine has excellent depth and concentration, needing only some time to allow the rich currant fruit to fully emerge. Already there is a lot of fine detail on the palate with a subtle, savory complexity of herbs, roast meat, and boysenberries that emerges on the long finish. This is delicious. 94pts
Thats the thing with older bottles......They take on a life of thier own even from the same case. This one was medium garnet and browning on the edges. The nose showed a little cork, on the palate the immediate thing is the cork, but its not corked. It has some dusty fruit of dried cherries and cassis. There is some cedar box as well as some vanilla bean. it seemd a bit tired but was still enjoyable in its own right. Just a little out of whack.
Deep brick color. A bit medicinal on the nose. Initially some interesting casis & band-aid on the palate. After 1+ hour; Good structure. Still alive. Some dark fruits, (currant, dark cherry) and moderate tannins still carry this. A decent Mondaviish acid level. Maybe a bit short but otherwise a very enjoyable 12 year old everyday bottling. A nice surprise.
Drinking a 1995 Mondavi Cab right now (Memorial Day weekend, 2009). I've cellared this beast since I got it in '97 or so, so it's always been treated well. Swept off the dust tonight on this guy rather than hitting some of the '94s. A little dusty but still some fruit on the nose. Smells better than it drinks at this age. Not a lot of complexity on the finish but still some good fruit in the front of the mouth. Only 13.5% alcohol, wish they still made Napa Cabs like that nowadays.
