Hand-harvested in cool morning hours Fermented in a combination of stainless steel and oak tanks 29 days of maceration (skin contact) to soften tannins Barrel-to-barrel racking to develop flavors 14 months of aging in French oak château barrels (20% new oak). Varietal composition 85 % Cabernet Sauvignon 5 % Cabernet Franc 5 % Merlot 2% Petit Verdot 2% Malbec 1% Syrah Flavor descriptors: Deep and dense with perfumed aromas and delicious flavors of blackberry, cassis, black olive and dark chocolate.
