It has been produced since the 17th century, named after its creator, Benedictine monk Dom Pierre Pérignon, who some say is the “Father of Champagne.” It was first produced commercially in 1936. The wines are only available from certain vintages and are highly coveted. The Chef de Cave is Richard Geoffrey, a former physician who began his wine career as the technical advisor for Domaine Chandon in Napa Valley, CA. The 2000 Dom Perignon Rose is a flashy, ripe Champagne that screams Pinot to a degree I have never encountered in another vintage of this wine. On the nose. The first perfumed floral notes quickly open up into orange peel and dried fruits, with the characteristics of a well-matured harvest and woody spices. On the palate. The envelope is ample and the structure remarkably balanced, precise and sophisticated. The warm, radiant complexity persists and vibrates, barely touched by the subtlest hint of bitterness
