The 2004 Cabernet Sauvignon Serpico (aged 12 months in new American hogsheads as well as small French barrels) comes from the Willunga district in the southern sector of McLaren Vale, near the ocean. It exhibits a dense purple color in addition to an extraordinary bouquet of smoke, blueberries, black raspberries, and cassis. Superbly endowed with admirable purity, sweet tannin, a floral/fruity component, and a fabulously layered, concentrated mid-palate as well as finish, it is one of the finest Cabernet Sauvignons to ever emerge from South Australia. It should age well for 10andndash;15 years.

Made from grapes dried passito-style, this is an excellent Cab. Well balanced with soft tannins, it shows earth and focused blackberry aromas, and very juicy blackberry and plum fruit. Pretty, unique and worth seeking out.

It exhibits a dense purple color in addition to an extraordinary bouquet of smoke, blueberries, black raspberries, and cassis. Superbly endowed with admirable purity, sweet tannin, a floral/fruity component, and a fabulously layered, concentrated mid-palate as well as finish, it is one of the finest Cabernet Sauvignons to ever emerge from South Australia. It should age well for 10-15 years. For a winery only established in 1999, and dedicated to hand-crafted, artisinal wines, Mitolo has consistently been a revelation in my tastings. Thanks to owner Frank Mitolo and his brilliant winemaker, Ben Glaetzer, the quality has been truly splendid.

Bottled six months ago, the 2002 Cabernet Sauvignon Serpico is allegedly made in the style of an Italian Amarone. Because of that, I expected to see more prune, raisiny, and tar-like aromas and flavors. In reality, the fruit was air-dried for seven weeks, resulting in considerable dehydration which rachets up the level of intensity as well as concentration. There is no doubting that this is a seriously built, full-throttle Cabernet Sauvignon on steroids. It offers a tremendous nose of new saddle leather mixed with creme de cassis, tobacco smoke, and a hint of spicy French wood. With great intensity, power, and richness in addition to surprisingly good balance, it can drunk now because of its seamless integration of acidity, tannin, and alcohol. This fascinating effort should last for 10ndash;15 years.

Aged 10 months in new French oak, the intensely varietal 2003 Cabernet Sauvignon Serpico boasts a fragrant black currant, floral, tobacco leaf, and spice-box scented nose along with intense fruit, wonderful purity, superb density, and remarkable elegance as well as definition. It will be interesting to see how this beauty evolves and ages. While accessible, it appears to have the stuffing and balance necessary to evolve for a decade or more.
