Winemaker's Notes:

Percentage Grape: sauvignon 60 % sémillon 35 % muscadelle 5 %<br/><br/>Soil: The vines are on a plateau or slopes with clay-limestone soil. The density of plantation is 2 800 per hectares which favours vigour : canapy growth and shading which gives the characters of the wine.<br/><br/>Growing Climate: Since 2005, the vineyard is organically managed, which means we use no: chemical sprays chemical fertilisers chemical weedkillers. All the vines are single trellised and cane or spur pruned.. All the vines are partially or fully mechanically deleafed. Selected blocks are manually green harvested and .Since 2008, we are reproducing selected old white varieties<br/><br/>Type of Harvest: méchanical<br/><br/>Vinification Length: 6 months after harvest<br/><br/>Vinification Method: The grapes were mechanically harvest during he night to avoid oxidisation , the cilled and macerated during 24 hours. Once pressed and filtred the juice is long fermentated the left on lees to increase flavour and palate richness.<br/><br/>Alcohol Percentage: 12.5 %<br/><br/>Sugar Rate: 0-5 g/l
