Mike Weir Cabernet Sauvignon Ice Wine 2006
Tasting Notes: A great gift from winter in Canada. Cabernet Sauvignon is a rarity among Icewines. Pale rose in colour, the nose shows raspberry jam, rhubarb, toffee and citrus/marmalade notes. The palate is lively with sweet notes of raspberry, strawberry and a hint of caramel balance with cleansing acidity. Technical Notes: Harvested at a frigid -8°C from Vineyards in Niagara on the Lake. The frozen grapes came in with sugar at 38° Brix and were rushed to the winery and pressed while frozen. The juice was slowly fermented at low temperatures in stainless steel tanks. Aging:Enjoy now or age up to 2013 for deeper flavour and added complexity.
RiceSelect's creamy Arborio gets blended with sweet potato, coconut milk and vanilla to create this decadent cheesecake. Pairs well with Saunternes; a white dessert wine that has hints of coconut from aging in oak barrels.
I was amazed by this wine. Didn't know what to expect but was very surprised. Very good acidity and balance. Not overly sweet as some ice wines seem to be. Almost wish I could have kept this a few more years for it to evolve.
