Made from a blend of Cabernet Sauvignon, Cabernet Franc, and Malbec, it displays an impressive, opaque ruby/purple color, followed by a superb nose of jammy black fruits, minerals, herbs and spices. The wine is full-bodied and rich, with exceptional length and balance, as well as gorgeously extracted flavors. It seems sweeter, more expansive,and deeper than when tasted last year. One of the top efforts of the vintage, it is another compelling Cabernet Sauvignon from this winery. Although accessible, Les Pavots possesses enough tannin and extract to merit 4-5 years of cellaring; it will last for 20-25 years. Once again, Les Pavots combines the best of the rich, ripe California fruit with a Bordeaux-like elegance and complexity.
An intense style that takes time to open up. Ripe cherry, red plum and earthy currant fruit offser the herb, leather and coffee flavors. Still, it has a dry, tannic aftertaste. Drink now through 2007. Tasted twice, with consistent notes.
The dense purple-colored 1999 Les Pavots exhibits sweet aromas of cassis, tapenade, cherries, licorice, and subtle wood. Medium-bodied, with a cool climate textural profile, noticeable tannin, and a Bordeaux-like finish, it will be drinkable between 2004-2015.
A blend of 68 percent of Cabernet Sauvignon, 15 percent Cabernet Franc and 17 percent Merlot from the slopes of Mount St. Helena in Knights Valley. Compares favorably with the stunning 1996 and 1997 vintages. Deliciously rich, smooth and polished, deeply concentrated, with layers of currant, blackberry, mocha and vanilla. Beautifully focused and deftly balanced, the flavors run on and on. Best from 2004 through 2013.
Founded in 1982 and having established a reputation for Chardonnay early on, Peter Michael Winery today has become one of California's finest Cabernet producers. Les Pavots ("the poppies") is a Bordeaux-style red (68 percent Cabernet Sauvignon, 17 percent Merlot and 15 percent Cabernet Franc) from a 23-acre vineyard located high above Knights Valley in eastern Sonoma County.
A rich, earthy, decadent style, with a loamy core of tannins underneath an equally earthy core of currant, tobacco, leather and spice. Dry, potent tannins coat the palate on the finish, with plenty of concentrated flavors. Cabernet Sauvignon, Cabernet Franc and Merlot. Best from 2004 through 2012.
The 1998 Les Pavots (80% Cabernet Sauvignon, 11% Merlot, and 9% Cabernet Franc) was produced from minuscule yields of 1.3 tons of fruit per acre. It exhibits a dense ruby/purple color in addition to aromas of melted fudge, cocoa, tobacco, and black currant fruit. In the mouth, the wine is medium to full-bodied, with firm tannin, and a compressed, moderately long finish. 1998 was a difficult vintage, but Les Pavots has turned out well. Nevertheless, it is a successful effort in a challenging year. Anticipated maturity: 2003-2014.
