prodcution Indigène receives its name from the indigenous, or native yeast, with which it was fermented. It is 100% Dijonnaise clone 115 and is the only wine produced at Melville where wild yeasts is employed. 0% stem inclusion. Yields at 3.9 lbs / plant. 14.2% alcohol. tasting notes Aromas of wild strawberry and bramble blue fruits mix with dried herb and maple spice. The palate impression is generous and silky offering red cherry and dried stone fruits contrasting a darker spice and fresh meat element.
