What to Expect

Cabenet Sauvignon: Originally of French origins, this versatile grape produces exceptional wines around the globe. It's usually medium to full bodied with a fine structure that supports black and red fruit flavors with typical notes of olive, chili and herbs that add complexity.

Winemakers Notes

Harvest Notes: 100% Cabernet Sauvignon harvested by hand took place in the early morning hours of Monday, September 27 at an average brix of 24°. Our vines produce low yields to capture intense, deep flavors in all of the fruit. Then the fruit is hand sorted before entering the crusher and placed in small stainless steel fermentors. Winemaking Notes: As primary fermentation finishes, the wine is re-racked and the must cold soaked for 36 hours while pumping over a screen twice daily to insure nothing but the highest quality fruit went through malolactic fermentation. Ginger and Jim McGrail planted their 16-acre vineyard to Cabernet Sauvignon (clones 8 and 15) in 1996 with the intent of selling most of their fruit to their good friend Phil Wente, who encouraged them to grow the grape in this hilly site on the far eastern side of Livermore. But then a lot of other people had the same idea. Fortunately, when the vineyard came online bigtime, there were other wineries who stepped in and took their excellent hillside fruit, most notably Steven Kent, Crooked Vine Winery, and Wood Family Vineyards.
