N. Mauzac is a relatively unheard of grape variety coming from the Gaillac region of southwest France. This rendition is sparkling and dry with aromas of apples, pollen, raw honey and white pepper. This is loaded with character thanks to the fact that it's unfiltered and is made with indigenous yeasts. Store this bottle upright and drink with just a light chill. Organic.
